Cooking Spray
3 cups old-fashioned oats
½ cup chopped walnuts
½ cup chopped almonds
½ cup chopped pecans
¼ cup flax seed
½ cup honey
¼ tsp salt
¼ tsp cinnamon
½ cup dried fruit (raisins, cranberries, cherries or chopped apricots)
Preheat oven to 300 degrees. Coat a large baking sheet with cooking spray.
In a bowl, combine all of the ingredients (except the dried fruit), mixing well to coat everything with the honey. Spread on the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes.
Cool completely on a wire rack. Mix in dried fruit. Store in the refrigerator in an airtight container for about 2 weeks.
Serve with low fat milk or on plain, low fat yogurt with fresh berries.
All of these nuts provide protein, a variety of healthy fats and minerals such as magnesium and potassium. They also keep blood sugar stable, reduce the risk for heart disease, and can help control appetite and weight. The cinnamon also helps regulate blood sugar.
